Migas de feijão frade - Fried bean migas, a traditional Portuguese dish that is full of flavour, very nutritious and super easy to make. With very simple and typically Portuguese ingredients, we can prepare this delicious recipe in less than15 minutes.
Ingredients
For 5 servings
- 400 g black-eyed peas (boiled and drained)
- 200 g kale
- 200 g cornbread
- 5 tablespoons olive oil
- 4 garlic cloves
- Juice of ½ lemon
- ½ teaspoon of salt
- ¼ teaspoon black pepper
Instructions
- In a large skillet or wok, over medium-high heat, place 1 tablespoon of olive oil and the minced garlic cloves. Shortly after, so the garlic doesn't burn, add the cabbage cut very finely. Let the cabbage sauté for 2-3 minutes.
- Meanwhile, place the bread in pieces in a food processor and grind until it is in small pieces, or alternatively, break the bread with your hands. Add the already cooked and drained beans to the cabbage, as well as the bread. Add the remaining olive oil, lemon juice, salt and black pepper. Stir all the ingredients and cook for about 5 minutes.
- Suggestion: Serve with broccoli roasted in the oven and mashed potatoes or with brown rice.
