The most perfect way to start the day. For those who think that Vegan breakfasts are just smoothies and fruit salads, here is a mega nutritious option, rich in protein (yes, without eggs or milk!) perfect for a breakfast in morning or for a mid afternoon snack.

  • 2 ripe bananas
  • 2 cups of oatmeal
  • 2 cups of plant milk
  • 1/3 cup of peanut butter
  • 2 teaspoons vanilla (optional)
  • 2 tablespoons chia or flax seeds
  • 1 teaspoon of baking powder
  • 1/3 cup of walnuts
  • ½ cup of berries (can be frozen)
  • pinch of salt

For the red fruit topping:

  • 1 cup of berries (can be frozen)
  • 1 spoon of chia seeds

  1. Crush the bananas with a fork and place them on a baking tray. Add the remaining ingredients and mix well. Put the tray in the oven at 180 degrees and bake for 30 minutes
  2. In the meantime, make the red fruits topping jam: place the fruits in a pan or non-stick, add the chia seeds and cook over low/medium heat for 5 minutes.
  3. At the end, just put the topping on top of the cake, along with more red fruits and serve (you can eat it in slices as a cake, or with non-dairy yogurt, etc.)
  4. Easy, tasty, nutritious and without any waste because in the end everything will be eaten...crumb by crumb!
