  • 4 orange-fleshed sweet potatoes
  • 1 tsp. powdered coriander
  • 1 tsp. powdered cumin
  • 3 chopped garlic cloves
  • 2 tbsp. of coriander chopped
  • Olive oil
  • 2 to 4 tbsp. of flour
  • Salt and pepper to taste
  • ¼ lemon juice

For the hummus:

  • 100g of green peas
  • 40g vegan feta cheese
  • 1 tsp. tahini
  • Salt, pepper and oil to taste

  1. Pierce the sweet potato with a fork, season it and place it in the oven for about 40 minutes or until cooked.
  2. Remove the sweet potato from the oven and place it in a food processor, add the remaining ingredients and blend until a homogeneous paste is obtained.
  3. Refrigerate for 30 minutes to 1 hour.
  4. Remove and form small flat balls.
  5. Place the falafel in a baking tin greased with oil and bake for 10 to 15 minutes at 180º.
  6. In the meantime prepare the hummus by placing all the ingredients in a chopper, grind until you get a pate.
  7. Now just assemble, spread a pita bread with pea hummus and place 3 sweet potato falafels inside, you can add salad and cucumber to give more freshness and crispness to the recipe.
