Recipe by Legumi Sushi in Lisbon

  • 1 courgette
  • 1 can of green jackfruit
  • 5ml Sesame oil
  • 30ml of soy sauce
  • 20g kombu seaweed
  • 50g vegan mayonnaise
  • 10g white and / or black sesame seeds
  • 30g chives
  • 20g of leek
  • Optional: hot sriracha sauce to taste

1. For the courgette: with a peeler cut thin layers until reaching the seeds, place the layers in a container where you can cover with boiling water for 4 to 5 minutes to whiten a bit (you can put in cold water, dry well and reserve) .
2. For the jackfruit, fry in sesame oil until all sides are golden brown, add the soy and water until covered, add the kombu seaweed and boil for 10 min. Remove all the liquid and let it cool down a bit. Cool the jackfruit: with the tip of a magic wand turned off, punch the jackfruit until it cools, after cooling, mix the jackfruit with 50g of vegan mayonnaise, chives, sesame, leek and the spicy sauce, mix well and leave in the refrigerator to reach the desired temperature.
3. Roll the jackfruit with the courgette and place chives and leeks and sesame topping.
