Today's recipe is a perfect sushi sandwich to take anywhere and that is also super easy to prepare! It is the perfect meal to take to the beach, picnic or even for socializing with friends or family. This sandwich is basically a lazy and more practical version of traditional sushi rolls. In Japan, these sandwiches are known as onigirazu and are very popular! Despite this unfamiliar name, it is nothing more than rice and some fillings involved in nori seaweed.

Possible ingredient substitutions:

In this recipe there are two crucial ingredients that cannot be replaced: seaweed and rice. Otherwise, you can make the following adjustments:

  • Tempeh - tofu or seitan
  • Soy sauce - tamari sauce
  • Vegetables - can vary to taste, using eggplant (previously cooked), raw radishes, pickles…

Servings: 4 sandwiches

  • 4 sheets of nori seaweed
  • 250gr of cooked rice (cold)
  • 150gr of tempeh or tofu, in thin strips
  • 2 teaspoons of soy / tamari sauce + extra to serve
  • 1 cucumber, in julienne
  • 1 carrot, in julienne
  • ½ avocado, in thin strips
  • Hot sauce to taste (optional)
  • Olive oil, to taste
  1. Heat a frying pan with a little oil. Place the strips of tempeh in it and sauté on both sides for about 3 minutes, until golden.
  2. Turn the pan off and add the soy sauce. Mix well, for the tempeh to be well covered. Reserve.
  3. Meanwhile, mix the rice with the hot sauce until it is well covered.
  4. Once you have all the elements ready, prepare a nori seaweed, with the rough side up. Put a little rice in the middle of the seaweed, spreading it out. Add 2 strips of avocado, carrot, cucumber and 2-3 striips of tempeh on top. Finally, add some rice again.
  5. Close the ends of the sandwich and seal it, making it more compact, with the help of a cloth (see the video below). Repeat the process with the remaining sushi sandwiches.
